Pumpkin Spice Protein Banana Bread

MAKES 8 SLICES


INGREDIENTS:

  • 1 ½ cup oat flour

  • 2 scoops 1st Phorm Pumpkin Spice Latte Level-1 Protein

  • ⅓ cup honey or maple syrup

  • 2 eggs (or ½ cup egg whites)

  • 2 small ripe bananas

  • ⅔ cup pumpkin puree

  • ¼ cup unsweetened vanilla almond milk (or preferred milk)

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice


OPTIONAL:

  • Walnuts

  • Pecans

  • White Chocolate Chips

  • Dried Fruit


INSTRUCTIONS:

  • Preheat oven to 325° and spray 9x5 pan with non-stick spray

  • In a large bowl, wisp together honey, vanilla, and pumpkin puree. Add eggs and beat them well. Once done, whisk in bananas and almond milk.

  • Add in baking soda, salt, pumpkin pie spice, and cinnamon. Pour in the 1st Phorm Pumpkin Spice Latte Level-1 Protein and oat flour. (Add optional ingredients here).

  • Bake 35-45 minutes (or until toothpick/knife comes out clean in center). Let cool in the pan for 10-15 minutes.

  • Remove from pan and let cool for at least 20 minutes before slicing.
