Quick and Easy Taco Bowls

INGREDIENTS:

  • 1lb ground meat (I prefer chicken, but you can use whatever you want)

    • about 4oz per serving

  • Taco seasoning

    • use whole packet

  • Rice

    • 1/4 - 1/2 cup per serving

  • Shredded Mexican Blend Cheese

    • 1-2 tbsp per serving

  • Spinach

    • 1-2 handfulls per serving

  • Mini Peppers

    • 3-4 per serving, diced

  • Black Beans

    • 1-2 tbsp per serving

  • Salsa

    • 1-2 tbsp per serving

  • Avocado

    • 1/4 per serving

Optional:

  • corn

  • hot taco sauce

  • sour cream or non fat plain greek yogurt

INSTRUCTIONS:

  • Cook rice as directed

  • Fully cook ground meat in a pan on medium heat, add 1/3 cup water and add in taco seasoning packet.

  • Dice and sauté peppers

  • Add the ingredients together in a bowl and enjoy!
