Turkey Taco Soup

This recipe is stupid easy. You can make it in one evening or let it cook and simmer all day. Tastes great day of and even better leftover having the seasonings and flavors seap together! 

Ingredients:

1 32 oz. carton or 2-3 cans vegetable broth

1-2 cups water

1 lb ground turkey

1 packet taco seasoning

1 can black beans 

1 cup frozen or canned corn (I used frozen Mexican roasted corn from Trader Joe’s)

1 garlic clove, minced or 1tsp garlic powder

¼ cup Ortega taco sauce (or 1 more Tbsp taco seasoning mixed with ¼ cup water)

2 cups frozen stir-fry veggies (I used Birds Eye)


Directions:

  1. Brown the ground turkey in a pan at medium heat and add taco seasoning

  2. In a separate pot, boil vegetable broth and water

  3. Add black beans, corn, garlic, taco sauce, and pepper stir fry and bring back to boil

  4. Let simmer for at least 20 minutes (the longer it cooks the better it tastes), stirring occasionally

  5. Optional: top with tortilla chips, green onions, and cilantro

  6. Serve and enjoy!
