Buffalo Chicken Bites

Buffalo Chicken Bites
1 lb ground chicken
¼ cup buffalo sauce (I used Moore’s)
1tsp garlic-pepper (or ½ tsp garlic, ½ tsp pepper)
Salt to taste
Preheat oven to 325 degrees.
In a large bowl, combine ground chicken, buffalo sauce, and seasoning
Use a small ice cream scoop to roll into about 2 Tbsp meatballs and place on the pan. 1 lb should make about 8
Bake for 20-25 minutes or until cooked through
Soy asparagus
1 lb fresh asparagus
1 tsp low sodium soy sauce (or Tamari)
1 tsp garlic-pepper (or ½ tsp garlic, ½ tsp pepper)
Wash asparagus, and snap or cut off the rough ends
Grease a frying pan and place over medium heat
Once heated, lay asparagus in a pan with 2 Tbsp water
Cover and simmer for about five minutes on med-low
Once water is absorbed, add soy sauce and seasoning
Cover and simmer for 15-20 minutes (or until asparagus is vibrant green and tender)
Prepare 1 cup uncooked jasmine rice according to package instructions and serve.
