Chocolate Banana Bread

Based off of Ambitious Kitchen’s recipe

Makes 1 loaf, 12 servings


3 ripe medium bananas

2 ½ cups blanched almond flour (or 2 cups almond flour, 1/2 cup all purpose flour)

3/4 cup unsweetened cocoa powder (or raw cacao powder)

3 eggs (I did 2 eggs and one egg white)

2 tsp vanilla extract

1/4 cup maple syrup

1 tsp baking soda

1 tsp salt

1/2 cup dark chocolate chunks (I used 72% cacao)

  1. Preheat oven to 350 F and line a 9x5 loaf pan with parchment paper.

  2. In a large bowl, mash the bananas until smooth. Mix in eggs, vanilla, and maple syrup.

  3. In a separate bowl, combine almond flour, cocoa powder, baking soda, and salt until homogenous.

  4. Add dry ingredients to wet, mix until smooth, then fold in chocolate chunks.

Optional: to make the bread fluffier, sift dry ingredients into the bowl

  1. Pour batter into the prepared pan and top with additional chocolate chips

  2. Bake for 45-60 minutes or until a toothpick comes out cleanly.

  3. Allow bread to cool for at least 15 minutes and top with a drizzle of natural peanut butter
