High Protein Low Cal Low Carb Breakfast Casserole

INGREDIENTS: 

  • 1 cup Egg whites

  • ½  cup, Cottage Cheese

  • 2 large, Eggs

  • ¼ cup, Feta cheese

  • 1 lb, Ground turkey

  • Seasonings of choice (measured with your heart)

    • Pepper

    • Salt

    • Garlic powder 

  • 9x9 pan

  • Aluminum foil

  • Cooking spray

INSTRUCTIONS:

  • Preheat oven to 350

  • Spray pan and line with aluminum foil and spray again 

    • If you have non-stick pans, you won’t need to do this but my pans are about half my age so… 

  • Brown the ground turkey on medium heat 

  • Mix egg whites, eggs, cottage, feta cheese, and seasonings in a bowl

  • Pour egg and cheese mix into pan 

  • After turkey is done, pour into the pan and spread as evenly as possible 

  • Bake for 20-25 minutes

    • Depending on your oven, you might be able to do less time

  • Let it cool and then divide into 8 squares

  • Cover with aluminum foil and store whole pan in fridge

  • Warm one square up and enjoy breakfast!
