Cheesy Crockpot Shredded Chicken + Rice Squash Boats

Ingredients:

  • 9 oz chicken breast with rib meat

  • ¼ tsp garlic powder

  • ¼ tsp black pepper

  • ½ tsp olive oil

  • 1 cup shredded cheese

  • 1 cup jasmine rice, cooked

  • 3 yellow squash 


Instructions:

  • Season chicken with garlic powder, pepper, and oil 

  • In a crock pot, cook the chicken breast with rib meat on high for 3 hours

  • Cook jasmine rice on stove top (follow directions on whatever rice you choose)

    • Save extra rice for other meals and snacks, store in fridge up to 10 days

  • Add cheese to crock pot and mix into chicken 

  • Add rice to crock pot and mix into chicken 

  • Cut squash in half and scrape out seeds and inside

  • Place chicken mixture into squash

  • Bake on 350℉ for 20-25 minutes

  • Let cool, eat immediately or store in fridge for 5 days

    • If reheating, use oven or air fryer
