Cheesy Crockpot Shredded Chicken + Rice Squash Boats
Ingredients:
9 oz chicken breast with rib meat
¼ tsp garlic powder
¼ tsp black pepper
½ tsp olive oil
1 cup shredded cheese
1 cup jasmine rice, cooked
3 yellow squash
Instructions:
Season chicken with garlic powder, pepper, and oil
In a crock pot, cook the chicken breast with rib meat on high for 3 hours
Cook jasmine rice on stove top (follow directions on whatever rice you choose)
Save extra rice for other meals and snacks, store in fridge up to 10 days
Add cheese to crock pot and mix into chicken
Add rice to crock pot and mix into chicken
Cut squash in half and scrape out seeds and inside
Place chicken mixture into squash
Bake on 350℉ for 20-25 minutes
Let cool, eat immediately or store in fridge for 5 days
If reheating, use oven or air fryer
