Stuffed Poblano Peppers

Ingredients:

  • 1 lb ground beef

  • 2 tsp butter

  • 1 corn on the cob, loose

  • ½ cup black beans 

  • ½ sweet onion, chopped

  • 1 small tomato, chopped

  • 3 tbsp feta cheese crumbles

  • 3 poblano peppers

  • 4 tbsp greek yogurt


Instructions:

  • Brown ground beef on stove top

  • Boil corn on the cob until tender and cut down kernels

  • Chop sweet onion and tomato 

  • Mix corn, beans, onion, and tomato into pan with beef

  • Cut poblano peppers in half, stuff beef mixture into peppers

  • Greek yogurt options:

    • Mix into bed mixture or top individual pepper

  • Bake on 350℉ for 20-25 minutes

  • Let cool, eat immediately or store in fridge for 5 days

    • If reheating, use oven or air fryer 

  • Meat mixture will have about 3 cups not in peppers, use 1½ cup per serving on the side
