Stuffed Poblano Peppers
Ingredients:
1 lb ground beef
2 tsp butter
1 corn on the cob, loose
½ cup black beans
½ sweet onion, chopped
1 small tomato, chopped
3 tbsp feta cheese crumbles
3 poblano peppers
4 tbsp greek yogurt
Instructions:
Brown ground beef on stove top
Boil corn on the cob until tender and cut down kernels
Chop sweet onion and tomato
Mix corn, beans, onion, and tomato into pan with beef
Cut poblano peppers in half, stuff beef mixture into peppers
Greek yogurt options:
Mix into bed mixture or top individual pepper
Bake on 350℉ for 20-25 minutes
Let cool, eat immediately or store in fridge for 5 days
If reheating, use oven or air fryer
Meat mixture will have about 3 cups not in peppers, use 1½ cup per serving on the side
